This presentation aims to enhance participants' understanding of food allergies, focusing particularly on sesame as a newly recognized major allergen. It provides an overview of the Big 8 allergens, which account for 90% of all food allergies in the U.S., introduces sesame's recent inclusion, and discusses the current regulatory frameworks like the FASTER Act of 2021. The objectives include increasing knowledge about allergy diagnosis, treatment, and research, as well as improving understanding of allergy labeling and food sources for sesame. Additionally, strategies for managing allergies in patients or clients are discussed, with a focus on the importance of accurate labeling and awareness of potential cross-contamination risks.
